Ingredients:
Marinade: 1/2 c. tomato juice 1 tsp. chili powder 1 tsp. cumin 2 tsp. oil 1 tsp. fennel seed 1 Tbsp. garlic chiles, if desired Corn Salsa: 1 tomato, diced 1/2 red onion, diced 1/2 green bell pepper 1 tsp. garlic 1/2 c. corn, cooked 1 tsp. chili powder 1 Tbsp. vinegar
Cooking Instructions: Mix all marinade ingredients and marinate catfish for 24 hours. Mix salsa ingredients and chill for 24 hours. Broil or bake the catfish and top with Corn Salsa.
