Ingredients: 4 c cranberries 1 c sugar 2 Tbsp orange zest 2 Tbsp grated ginger 1 c sliced red onion 1 tsp crushed red chilies
Cooking Instructions: In a saucepan put just enough water with the sugar to let the sugar dissolve. Bring to a boil and simmer until it starts to thicken. Add orange zest, ginger, onion and chilies. Boil until it is very thick, like jam. Add the cranberries and boil. When they start to split, remove and chill. Serving Suggestions: Serve on Tuna Steak Sandwich with Cranberry Chutney and Napa Cabbage Coleslaw.
