Ingredients: 1 8 oz package Coleson’s Catch Oyster Meat 1/2 c diced yellow onion 1 Tbsp chopped garlic 1/2 tsp allspice 2 Tbsp butter 2 quarts lightly packed spinach leaves, cut julienne Salt and pepper 4 c milk Roux
Cooking Instructions: Sauté the onion, garlic and allspice. Add spinach leaves and salt and pepper. When the spinach is completely wilted, add the milk. As it comes to a simmer, add a little roux to thicken slightly. Add the oyster meat and heat through; adjust seasoning. Additional Comments: Roux: melt butter and stir in flour to make a paste. Make more than you need and keep on hand.
